Meatfree Monday inspires us to work some good clean food into our routine but sometimes we want something sweet! Luckily, I happened on this dark chocolate vegan pudding that requires NO COOKING, and it’s made with an unexpected surprise ingredient — avocado! It’s absolutely delicious, just over 200 calories, high in protein, low in sugar and takes only 5 minutes to make. It was inspired by a recipe by chef Matthew Kenny.
SERVES 6
- Â 2 medium avocados
- Â 1 cup Organic Unsweetened Almond Milk
- Â 3/4 cup Organic Cacao Powder
- Â 1/3 cup Maple syrup
- Â 1 tsp Organic Vanilla Extract
- Â 1/4 tsp Cinammon, Ground
- Â 1 pinch sea salt
DIRECTIONS
1Â Remove peels and pits from your avocados, and slice.
2Â Put the avocados into your blender, and add almond milk (or coconut milk).
3Â Add organic pure maple syrup, cacao powder, vanilla extract, cinnamon and sea salt.
4Â Blend on high until mixture is creamy.
5Â Serve in 6 dessert cups and enjoy now, or put into refrigerator to chill for later.
6Â Garnish with raspberries and mint leaves if you’ve got them!
