Two Ingredient Pumpkin Muffins

As we all know, it’s pumpkin season and now this popular flavor is creeping into everything we eat, including pizza! Yuck! I’ll stick to baking with it and found a super easy recipe that originally came from Weight Watchers. Knowing how busy we all get at this time of year, you only need TWO ingredients for these delicious muffins! Feel free to dress them up with icing (I suggest cream cheese icing) or chocolate chips.

1 spice cake mix
1 can pumpkin puree (small can, not pie filling)
Preheat to 325 degrees.
Stir together cake mix and a can of pumpkin. Make sure you use the smaller can (15 or 16 oz).
Scoop into lined or well sprayed muffin tins.
Bake 18-20 minutes (until toothpick comes out clean).
This recipe makes 12 muffins.

Prepare for these muffins to disappear quickly!
