Every year the traditional Thanksgiving dinner includes several mouth-watering desserts. One of the top choices is always pumpkin pie alongside apple pie and cookies. Sometimes we just want to add some fun to the traditions and I have a new spin called the “un-pie.”
What’s an “un-pie” you ask? We’ve taken the delicious insides of a pie and created a crustless treat you eat like a decadent muffin!
Your guests will be pleasantly surprised at how moist and delicious the “un-pie” is. I’m pretty sure they won’t even notice the crust is missing! The best part is that these are super easy to make ahead of time and I’m pretty sure everyone will want this recipe!
This dessert is baked in a muffin tin because they don’t have a crust. You’ll need to put paper baking cups into the muffin tin and preheat the oven to 350*
Un-Pie Pumpkin Recipe:
2/3rd C flour
1tsp Pumpkin Pie Spice
¼ tsp Baking Soda
¼ tsp Baking Powder
1 ⅓ C Sugar
Place sugar in a separate bowl and mix the other dry ingredients together, set aside.
15 oz Can Pumpkin Puree (not seasoned)
¾ C Evaporated Milk
1 ½ tsp Vanilla Extract
Whisk the wet ingredients into the bowl containing the sugar. Once thoroughly mixed,
Add in the dry ingredients. Use an ice cream scoop to pour evenly into the muffin tin.
Bake for 30 minutes.
These don’t rise much and once completely cooled, top off with homemade whipped cream and a sprinkle of Pumpkin Pie spice.
I guarantee my delicious pumpkin “un-pie” dessert will become a new holiday favorite!
